Fresh home baked bread with your morning coffee. That sounds delightful doesn’t it? We thought so too. For all those who haven’t dared to bake but really want to give it a shot, we’ve got an easy-to-make at home bread recipe for you, courtesy Bombay Chow-party.
The origin of the name of the bread is uncertain, but NID Graduate turned home-baker Reshmy Kurian think it’s because of the way monkey’s eat their food; breaking off little bits from a whole and eating. This bread is made up of individual portions that form a whole bread loaf. One can easily break a small piece from the entire loaf and eat it, just like a monkey does. If calling it ‘monkey bread’ wasn’t weird enough, this kind of bread also goes by the name of monkey puzzle bread and pinch-me cake.
Here’s how you can make it. Just follow the simple steps. The entire list of ingredient’s you’ll need are listed below the video.
Active dry yeast or instant yeast - 1tbsp
Unsalted melted butter - 12tbsp
Sugar - 4tsp
Warm water - 1 and ½ cup
Egg - 1
Flour - 4cups
Kosher salt - 2tsp
Dried Oregano - 2tbsp
Dried basil - 2 and ½ tbsp
Minced garlic - 2tsp
Chopped oil-packed sundried tomatoes - ½ cup
Chopped black olives - ½ cup
Diced jalapeños - ¼ cup
or mildly spiced green peppers
Chopped parsley - 5tbsp
Dry finely grated Parmesan cheese - 1 and ½ cup
*Smoked paprika powder or chilli powder - ½tsp
Mozerella cheese - 30 to 36 tennis ball sized pieces
*Bacon or chicken - 250 to 300 grams
If you want to opt for sweet bread over a savoury one, Reshmy suggests using plain chocolate for the filling of the bread and coat it with cinnamon and sugar powder. It’s definitely a hit with kids and anyone with a sweet tooth.
Irish soda bread
The Irish soda bread is a quick and to make bread. It doesn’t need to be kept aside for the yeast to work its magic, in fact it doesn’t require yeast it all. Reshmy says it is perfect for a quick fix morning breakfast or evening snack.
All purpose flour - 2 cups
Sugar - 2tbsp
Baking soda - 1/2tsp
Baking powder - 1tsp
Salt - ¾ tsp
Unsalted butter or browned butter - 2tbsp
Sour curd - ¾ cup
Egg - 1
Flavouring and seasoning variations:
1tsp grated orange zest, ½ cup dried currants and chopped walnuts
Rosemary, pepper and garlic
Garlic, cheese and thyme
Cardamom and 1tsp grated lemon zest
Dried basil, thyme, oregano, sunflower seed and currants
- For this bread, you need to combine all the dry and wet ingredients separately.
- Mix the flour, sugar, baking powder, baking soda and salt in a bowl.
- In another bowl, mix the curd melted butter and egg. Lightly beat the mixture.
- Slowly add the wet mixture into the flour mixture. Add all your seasoning and flavouring into the dough.
- The dough will be wet and shaggy. Put this dough onto a well-floured board and gently knead it a few times into a round loaf.
- Ease the loaf onto a prepared pan sheet and lightly cut and ‘X’ into the top of the bread with a serrated knife.
- Bake for 45 to 55 minutes or until a cake tester comes out clean.
- To be sure, when you tap the base of the loaf, if it sounds hollow, it’s ready.
